Instructions
Sweet Potato Wraps
  1. Slice sweet potato into 1⁄2 -1 cm thick slices & cook them as below.
  2. Method 1 :Put them in your air fryer for 10 – 15 minutes
  3. Method 2: Put them on a grill to brown off. Once they have some colour on them arrange them on an oven tray & pop in the oven for another 10 – 15 minutes or so to ensure they are fully cooked through.
  4. Allow them to cool before using them to roll up your favourite fillings.
  5. Lay your slices out side by side to your desired width making sure they overlap and place your favourite fillings starting at about 1/3 of the ‘wrap’ width, don’t fill to full or you will have a blow out situation! Once you have your fillings in place gently roll them up either securing with a tooth pick or making sure the open side of the roll up is facing down to ensure they don’t unroll.
  6. Some of my favourites include: Hummus, garlic aoli, guacamole or salsa with spinach, kale, lettuce, sprouts, thinly sliced cucumber, sundried tomato, roasted capsicum, carrot, red onion, fakon, tuNO, Chik’n Jackfruit spread, marinated mushrooms, asparagus and fresh herbs.
Vegan Garlic Aioli
  1. Put all ingredients into a bowl and stir till combined.
  2. Please note that if your salad greens are wet that it will thin your dressing so don’t add water to original recipe.
Crispy Garlic Chickpeas
  1. Put into oven (180 degrees) & cook till crispy or pop them in an airfryer for 15-20 minutes, check them regularly.
  2. Make sure they are super crispy before removing them from the oven otherwise they will go soggy when stored. Note: they will crisp up more as they cool.
  3. Watch them carefully they can burn quickly.
Homemade Red Pickled Onions
  1. In a jar make up your marinade, shake it to combine and then add your onion, shake well and allow it to sit in the fridge for at least 1 hour so all the ingredients can become friends, over night is better. Serve on pretty much anything that needs a little boost of flavour! These are delicious !!!
  2. You can also use this mix for cucumbers, carrot or pretty much anything you like to pickle!

Creating the Sweet Potato Roll Ups with Creamy Caesar Style Kale Salad, Crispy Garlic Chickpeas & Pickled Red Onion

Tear kale up into bite size chunks and squeeze a little lemon or lime juice over it (this helps with absorption of iron from the kale, it also helps to make the kale softer and more delicious) massage the kale quite firmly to start to soften the kale a bit, the kale will start to go bright green and wilt a little.

Add your favourite salad ingredients such as cucumber, carrot, sprouts, snow peas, red onion etc. and coat well with Creamy Vegan Garlic Aioli dressing. Sprinkle with sesame seeds, hemp seeds and activated almonds.

Just before serving add a handful of Crispy Chickpeas so they don’t go soggy, add your Sweet Potato Roll UP and ENJOY!!!
