Ingredients
Vegan Omelette
- 300 gm Silken Tofu
- 2 tbspn Corn Flour
- 1 - 1.5 tbspn Onion Powder
- 1/2 tbspn Garlic Powder
- 2.5 tbspn Nutritional Yeast
- 1/2 Lime or Lemon Juice
- 1 tspn Stock Powder
- 1/8 tspn Black salt or sea salt
Smokey Garlic Mushrooms
- 6 - 8 large Mushrooms of your choice
- 1/4 tspn Garlic Powder
- 1 tspn Wheat free tamari or soy sauce
- 1/2 - 1 tspn Liquid Smoke Please note if you don't have liquid smoke, smokey paprika will work too!

Instructions
Vegan Omelette
- Put all ingredients into a blender and blend till smooth
- Heat non stick or lightly greased pan (low/medium heat)
- Pour half batter into pan and cover. When omelette is starting to produce lots of bubbles very gently flip to brown other side.
- Repeat to make second omelette.
- Serve on your plate and top with smokey mushrooms, gently wilted spinach, sundried tomatoes, spring onions & basil.
Smokey Garlic Mushrooms
- Slice mushrooms thinly
- Heat pan, add mushrooms, garlic powder & soy sauce and gently fry until the mushrooms are tender
- Add the liquid smoke and stir through well.
- Serve immediately.
