Smokey Mushroom Vegan Omelette
This delicious fluffy vegan omelette is so easy & delicious that I'm sure will become a weekend staple.

Instructions
Vegan Omelette
  1. Put all ingredients into a blender and blend till smooth
  2. Heat non stick or lightly greased pan (low/medium heat)
  3. Pour half batter into pan and cover. When omelette is starting to produce lots of bubbles very gently flip to brown other side.
  4. Repeat to make second omelette.
  5. Serve on your plate and top with smokey mushrooms, gently wilted spinach, sundried tomatoes, spring onions & basil.
Smokey Garlic Mushrooms
  1. Slice mushrooms thinly
  2. Heat pan, add mushrooms, garlic powder & soy sauce and gently fry until the mushrooms are tender
  3. Add the liquid smoke and stir through well.
  4. Serve immediately.
